Heat water up to 93-94 °C.
Place the filter in the chemex and rinse with water to eliminate the taste of paper and for our utensil to warm up.
Grind the coffee.
Place the coffee in the filter.
Place the chemex on the scale and turn it down to zero. Start the timer and at the same time pour the water over the ground coffee, trying to get the water all over the coffee. Wait for 30’’.
With a steady flow and circular movements we continue to pour the water until the scale reaches 350gr and at 1 ½’ add the rest of the water.
We are ready to serve.
